Dairy Science and
Technology is a course that gives the students knowledge of the dairy industry,
of variable dairy products and of different experimental tools. The practicals
of the course were structured to start with a general overview of the dairy
products by carrying out dairy tests on several products and applications of
several dairy ingredients. The practicals progressed into more specific
products and procedures, as manufacturing of yogurt, cheddar cheese and
processed cheese. The production of each product was carried out by different
teams, each producing a variable of the product. In so, the effect of changing
standard ingredients and procedures was evaluated. A dairy plant visit was
held, hosted by the technical staff of the company, to broaden the view on the
dairy plant in all aspects. Finally, different types of cheeses were graded and
scored.
The dairy industry
includes both the farming and industry sectors. Both of these develop
dramatically with time. A mini media search was conducted, in order to mention
a few examples of such developments.Â
